Much используется с неисчисляемыми существительными:

Much money, much time.

Many используется с исчисляемыми существительными:

Many books, many shops

A lot (of) используется и с теми, и с другими:

A lot of food, a lot of coffee, a lot of people, a lot of shops.

В вопросительных и отрицательных предложениях обычно стоит much или many, а не a lot (of):

Do you drink much coffee?

He hasn’t got many friends.

A lot (of) чаще встречается в утвердительных предложениях:

I drink a lot of coffee.

They haven’t got much money but they’ve got a lot of friends.

A lot можно употреблять без последующего существительного. Тогда предлог of опускается:

He ate a lot of food. НО He ate a lot.

Если с a lot of используется неисчисляемое существительное, то глагол стоит в единственном числе. Если исчисляемое — глагол стоит во множественном числе:

There is a lot of food/money/coffee.

There are a lot of trees/shops/people.

(Иногда much или a lot могут означать "часто":

Do you watch TV much? — No, not much.

We like films, so we go to the cinema a lot.)
